How to cook Chilean Sea Bass:
Pat the fish dry and season generously with salt & pepper. Heat oil in a skillet over medium-high heat. Place the sea bass in the pan and sear 4–5 minutes until golden. Flip, reduce heat to medium, and add butter + optional garlic/herbs. Baste with the melted butter for 4–5 minutes, until the fish flakes easily. Finish with lemon juice.
